Farm Stand Recipe: Cucumber Tomato Salad

I've had a few requests recently for family favorite recipes made with our products. I'm so excited that you want to hear about these because these are the foods I feed my own family for our health (not to mention they just taste amazing)!

I'm a little embarrassed to even call this one a "recipe" since its so uber-simple, but my family and I eat this multiple times a week. Its crisp, refreshing, tart, sweet, easy to throw together, and just the perfect side dish to balance out any of our grilled meats.

I don't know about you, but I'm too dang busy to fuss with fancy weeknight dinners, and it literally can't get any easier than this!

Farm Stand Recipe: Cucumber Tomato Salad

-Kristin's Farm Stand Cherry Tomatoes

-Kristin's Farm Stand Mini Persian Cucumbers

-Hemp Seeds

-Olive Oil

-Lemon

-Himalayan Salt*

I like to cut the cukes into nice thick slices to enjoy the crunch (use the whole cuke... no need to remove skin or seeds), and I cut the cherry tomatoes in half. Sprinkle in a handful of hemp hearts/seeds over the top. Drizzle generously with olive oil, squeeze a half a lemon (to your taste) and top with a few grinds of *Himalayan salt. Serve this salad super cold!

*A note on Himalayan salt: We've been told for many years to decrease our sodium intake for our cardiovascular wellness. That information was based on sodium coming from processed iodized table salt. According to "The Blood Pressure Solution" ebook, Dr. Mark Hyman, director of the functional medicine department at the world-renowned Cleveland Clinic, "I recommend staying away from iodized salt when possible... Iodized salt also contains sugar in the form of dextrose.... Use salt in its most natural form... Use high-quality Himalayan or sea salt."
